....any other backyard syrup makers? Sap flowed for the first time here yesterday and today, boiled down our first 15 gallons today for a quart and a half of the sweet stuff. Nice weather here today! We still got about a 2 ft snow base here, gonna take some rain and warmth to lose it.

My taps flowing good still. Funny how they are; last year, it was so warm and we had a long stretch with the temps above freezing even at night and the flow never let up. Cast some doubts on age-old freeze-thaw concepts.

After slowing down for a day or so the sap is running again. I've been told that the southern tier maple syrup is sweeter and better tasting than the northcountry variety.

I pulled all my taps on Sunday. All my maple trees started to bud and the sap is getting bitter. Ended up with 60 gallons of sap from 5 trees. Still in the boiling process. I only have a turkey fryer and a 4 gallon pail so boiling takes a while. . . finish on the stove top.
How many degrees over boiling do you guys go for your syrup? I finished two batches so far. One I went 8 degrees over boiling and the syrup is almost too light and I went to 12 degrees above, and it is really thick and dark. Just curious what everyone else does.

I mess around with it in the nearby neighborhood! No Sugar maples on my tap line, so the ratio of sap to syrup is much higher. Tapped about 8 trees or so for roughly 20 gallons of sap, which boiled down to a quart of syrup. Best quart of syrup I've ever had! The sap run is about over for my area...but the next couple days, the sap should flow a little more.

I broke down and bought a hydrometer. Because I'm selling it I needed better consistancy between batches.

Woj I live at 2000 ft elevation so my water boils at 208 F, I take my sap to about 217 (8-9 degrees above boiling) but I also find this is not that consistent....I use the spatula and watch how it comes off it when I put it in and take it out. If it drips not yet, if it sheets off...it's time.

I've had 2 good days so far, today the buckets are 1/4 full and frozen solid. Only 24 F here when I got home from work today. Warmer weather not coming here for some time. No budding here, way too early.
