Thanks. I boil at 212 here at 200ft elevation and didn't take my second boil to a high enough temp. I took it 8 degrees but it wasn't enough, but still tastes great.

I've been told that having to high of a water content in finished syrup can cause it to sour. Had this happen to me years ago.

Not thick enough an it'll more readily spoil (mold development), too much and it'll more readily form crystals. It's the Goldilocks' method; too much, too little, just right.

I put it right in the freezer to help the longevity.

any of you ever boil apatato in syrup to clean it afterits syrup/? works real well justcook tell potaoto is slitely cooked and all dirt will stick to it.

Same here.....had two good days of flow on that warm weekend, been below freezing ever since.....19 here this AM. Looks like it will be another week coming up of below freezing temps.

Hopefully the sap keeps running for you guy's, it's about done down here in SE PA. It was a much better run than last year . Made about a gallon last week.

Anyone getting any? Still all frozen up here....16" of snow here this week and temps never above 28. Still only had 2 days of sap flow here. Bummer.

Same here, one good weekend. A few drips as the sun warms up in the afternoon. The last 2 weeks has accumulated about half a bucket of ice. Things may change but would recommend people not to wait to purchase some.

Where can someone purchase a 2X4X 6 inches deep stainless steel pan for boiling sap. Do you have to custom order one?

finshed off @ 7 pints yesterday nice light color. Didn't think that was too bad from my 3 taps so far and I hae given away 10 gallons of sap. will have to see what the rest of the season brings...
