How clean should a cat be fleshed,the first one I did got stringy looking?

I flesh cats clean - carefully. Big adult cats can have their share of fat, including under the saddle just like coyotes. Bobcats taken in the earliest part of the season may not have much to remove, though. By "stringy looking" I would assume you mean the red meat on the saddle? If so, I'd also assume it's because you didn't get it all or you tried to flesh it when it was already partially dried? It's hard to tell what you are referring to without seeing it.
