Here's one I use for trout. I dont really measure anything out. I do it by taste/ experience.
- salt - dark brown sugar - soy sauce - water - crushed black pepper (coarse) - A bunch of Salmon fillets/ trout (no skin) - Cayenne pepper - Sometimes I toss in some chopped garlic
I cut the fillets into strips about 1 inch wide. If it is a trout, I butterfly it first and then cut strips. Then I put it in the dehydrator for 12 hours or so.

Ok obviously my first post didn't make it here. I will try it again
Easiest Jerky Recipe
1 part Worchestershire Sauce 1 part Soy Sauce 2-5 drops liquid smoke 2-5 table spoons garlic hot pepper if interested
Best if used with thinly sliced meat. Allow to soak for 48-72 hours then slap on dehydrator, or put in a 200 degree oven with the door propped open until dry.

Hey John- Yeah definitely simply but I haven't found a better wet recipe out there. If I am going to use ground for jerky, I buy the NESCO mixes. They are great.

I've used this for venison, duck and goose meat: 1/4 cup Soy Sauce 1/3 cup Worcester Sauce 1.5 tsp. Onion Powder 1.5 tsp. Black Pepper 1.5 tsp. Garlic Powder 1 tsp. Salt
Used thin slices of meat, let it soak for at least 24 hrs then put on a dehydrator. rotate trays about every hour to evenly dry the meat
