how do you skin the feet? Mainly the pads.. Do you cut around the pads like a bear, or do you cut right up the middle of the big pad?

Most just skin to the ankles unless you are skinning for taxidermy work. You can skin down to the pads and then cut the last joint of the toes off with a pair of wire cutters if you wish.

How do you do the rear feet? I want to use a gambrel but any confused on how to start with the hind feet.

might start with the animal on the ground or on a table to do the back legs and feet, then move to a gambrel

I always start the hind feet on the ground, in fact, I skin pretty much the whole hips on the ground and then put them up to finish.
