I love hunting geese. Alot of shooting and fun. Problem is how do you cook them? I've tried every recipe I could come across. Always taste like LIVER. Yukkk.

Soak them in salt water for 12 - 24 hours after cleaning. Roast them in those oven bags with some taters, carrots, celery & onions with strips of bacon pinned to the beast with toothpicks and stuff them with regular turkey stuffing. They are pretty good eatin that way. You can also make them into jerky and they make great chili as well.

Buckhunter i have always thought they tasted like liver also. And they can be tough.Thats why i dont shoot them much anymore. If i could find a decent recipe i would give em one more try. Might have to try it the way wayne does it.

I'll post the one my Girl friend uses when I get home. She made a casserole dish and it was the best I ever tasted.

a chef we knew made this special for me and my wife with some geese i shot. he simply cooked i and pulled it like you do pork. he then took the shredded meat and stuffed it inside a jalepeno pepper. breaded the pepper and fried it like you do poppers. good for a meal or appetizers for a party of PETA members. ;D
