My lovely bride suggested making quesadillas for dinner and I had a bit of leftover venison loin in the frig I decided to try. We don't have a lot of experience making these so thought it was a bit of a crap shoot. Started with some fire roasted, salsa tomatoes and drained most of the liquid. Added a bit of mayo to make a spread for the bottom shell. Didn't have much in the way of toppings except some caramelized onion, green onion and cheese. Then into some well seasoned cast iron... Actually came out quite tasty. The fire roasted salsa tomatoes made a big difference. Only $0.49 a can at Aldi's and can see using them in a bunch of other dishes.

6am and now you got me craving Mexican food... and venison ... crockpot Mexican venison chili tonight! Taco seasoned venison in chili. Thanks for the idea Jim!
