Does anyone have a good recipe for cooking beaver?

I find small ones are better tasting. Probably just personal preference. Start by removing all glands and organs from the beaver. Soak beaver in mix of salt and water to get all blood out. I soak usually overnite. Rinse it good. I cut it up in chunks at this point. I use a dutch oven. Large one. I fry up bacon and put grease and a tablespoon of olive oil in bottom of dutchie. I then moisten in water and roll in some flour. I then brown it .I add 1 1/2 cup of water or so. Keep her moist. Won't dry out like venison but still gets dry if not kept moist. I add onions,parsnips, carrots. I keep dutchie on stove for about 1 hour.Adding more water as needed. I then add 2 big tablespoons of horseradish. I grow my own so I know it hot. I leave it on another 1/2 hr or so. I sometimes add wine instead of so much water.Again,personal preference. Enjoy!!!!! I do.

I dont have one but every beaver I catch I butcher it by cutting off the meat like you would bone out a deer.I then put it in a pan of salt water over night and then freeze it in a freezer bag. I give the beaver meat to a friend of mine and several times a year he invites me over to eat.He usually has the beaver mixed in with something,he has cooked up several different types of meals with it, and it never has turned out bad.About the tenderest meat you will ever have.

I was recently at a wild game dinner, had no idea beaver were eatable. It was prepared as strognoff. Very good and tasty. Sorry, don't have the receipe but would think any beef strognoff recipe would work. www.rugermountaincedarloghomes.com/

We have roasted it, stews soups any way you want. We like to get as much fat off the meat as you can. Can make it strong tasting. if you like liver, beaver liver is oustanding.
