Ok thanks ! I'm assuming just chunk it up, some sodium benzoate and glycerin and I'm good to go ?

Dear Friend, Gut them completely, chop off the head, feet and tail, leave the fur on. Chop into walnut size pieces or you can grind them up (you'll need to bone out the meat unless you have a heavy duty grinder) then put up fresh or taint to your preference. Preserve with sodium benzoate or use borax powder, 1 cup per gallon. To antifreeze i like to mix glycerin and 100 proof vodka 50/50, add just enough to moisten the meat when mixing. Mix a couple times a week for 2-3 weeks until preservative sets. I use food grade buckets with rubber seal lids (obtainable free from most grocery store deli's). No need to bury, just store in a cool dark place like a basement or root cellar. Use as is or enhance with your favorite additives. Regards
