I made this substituting goose for duck.
Ingredients
2 Duck breasts approx 6 oz. each 3 tablespoons Sunflower Oil (I substituted Corn Oil, Sunflower is expensive) 1 Small Egg, Lightly Beaten 1 garlic clove 6 oz bean sprouts 2 Slices fresh ginger cut into thin sticks 2 teaspoons oyster sauce 2 Scallions cut into thin strips Salt and Pepper to taste\
Marinade Ingredients
1 tablespoon honey 2 teaspoons Chinese Rice Wine or Dry Sherry 2 teaspoons light soy sauce 2 teaspoons dark soy sauce
1) Remove fat and skin from duck and cut into strips, place in bowl. Combine marinade ingredients and pour over duck. Cover with plastic wrap and place in refrigerator over night.
2) Place 1 tablespoon of oil in small heated frying pan and make omelet with egg. Place aside to cool and then cut into strips.
3) Drain and discard marinade
4)Bruise garlic with flat of knife. In wok or large frying pan add 2 tablespoons of oil. Fry garlic for 30 seconds pressing it to release flavor then discard garlic. Season bean sprouts and stir fry for 30 seconds. Transfer to a heated bowl.
5) Stir fry duck until cooked (approx 3 minutes). Add ginger and oyster sauce and fry another 2 minutes. Add sprouts, scallions and egg and stir fry briefly. Serve (I served it over rice).

Sounds like a tasty recipe. Might try this at grouse camp this year, thanks for posting it.
